Peppermint Chocolate Holiday Cookie Recipe!

Tis the season for holiday cheer, thoughtful DIY’s, and delicious recipes! Brick & Portal has plenty of those! Kickstart the merriest time of the year right with our favorite peppermint chocolate cookies to spoil your loved ones with!

Here’s what you’ll need for 20-22 holiday cookies:

  • 1 ½ cups all-purpose flour
  • 1 stick unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¾ cup baking cocoa unsweetened
  • 1 teaspoon baking soda
  • ¾ cup granulated sugar
  • 2 eggs
  • ½ cup of crushed candy canes (or 2 teaspoons of peppermint extract)
  • ¾ cup light brown sugar

Start by preheating your oven to 375°F. Mix together all-purpose flour, baking cocoa, baking soda, and salt.

In a separate bowl, add melted butter and beat until fluffy. Mix in eggs one at a time. Then add both granulated and brown sugar and vanilla extract (if you decided to use peppermint extract, add it here.) Now pour your dry mixture into this bowl and stir until well blended. If you decided to use crushed candy canes, mix them in slowly, here.

Roll out your dough on parchment paper and cut your cookies into fun Christmas shapes!

Place on your baking sheet and bake for 8-10 minutes (or until the cookie starts to crack on top). Let cookies stand for about 10 minutes.

Now time to decorate! Ice your fun ornament-shaped cookies Hint: If you have leftover crushed candy canes, sprinkle them over your iced cookies!
